What Do You Do with All Those Eggs?

April showers may bring May flowers, but Easter brings a whole bunch of leftover hard-cooked eggs. For those of you who celebrate Easter, coloring and decorating eggs can be a fun - albeit messy - project for you and your kids. But once the Easter festivities are over, what do you do with all those eggs?

SmileyEgg.gifSo let’s all help each other out this year by sharing your favorite uses for those post-Easter eggs* - which, by the way, are affordable enough to fit in any budget. Got any great egg salad recipes? How about deviled eggs? Share your photos, videos, and family-friendly recipes - if it involves hard-cooked eggs, we want to know about it!

Did you know that the week after Easter is Egg Salad Week? Makes sense, really. A great time to use up those leftovers and get an extra boost of high-quality protein. But if egg salad isn’t your forte, don’t despair. The American Egg Board website has lots of great recipes that will put those post-Easter eggs to good use. Hard-cooked eggs stay fresh in the refrigerator for up to a week.

*For food safety’s sake, make two batches of eggs - one for hiding and one for Easter recipes and leftovers - so you don’t have to worry about hidden eggs being out for too long or coming into contact with dirt, chemicals, bugs or pets.
